Lovers of the famous Italian dish Carbonara know that April 6th is your day. It’s the day the world celebrates the signature tasty dish called Carbonara. Inaugurated in 2017 by the International Pasta Organization (IPO) and the Italian Association of Confectionery and Pasta Industries (AIDEPI), April 6th was decided to be the day consumers around the world could celebrate one of their favourite dishes.
It’s the day in which lovers of this delightful egg-and-bacon-sauce dish get to debate on the ‘real’ recipe and how to make it!
Whilst Purists state that only pork tongue should be used, Enthusiasts wager that bacon or even pancetta gets the job tastily done. Not only is there a heated debate on the type of bacon to use, the debate flames up when it comes to the grated cheese used as dressing – some say Romano, other swear to Parmisan – while others dispute on whether to leave the egg white in with the yolk or not. How to forget the courtiers of garlic or their nemesis those partial to onion argue on the extra flavour they bring to the dish? And what about the type of pasta that best fits this centuries old sauce? Should it all boil down to Spaghetti? To bucatini? To maccheroni? Or other short pasta?
